Hacienda La Esmerelda

Hacienda La Esmerelda

In 2002, the son Daniel noticed that the coffee bushes in a particular valley produced coffee of a remarkable quality. These superior coffee beans were sold separately as Esmeralda Special. Though altitude presents challenges for growing and harvesting, it is up in the mountains of Boquete that the unique floral and citrus aromatics of geisha coffee shine brightest. Because of these unique circumstances, only fifty to hundred bags are produced a year. The 2017 crops from Hacienda La Esmeralda, an old coffee farm in Boquete, Panama and an exclusive crop with cupping scores of over 90 points.

Klatch Coffee has two of Lamastus Estates Family ASD Geishas, one being the Elida Geisha Natural ASD, the other Elida Geisha Natural 1029 (Green-Tip ASD).
ASD stands for Anaerobic Slow Dry, wherein the coffee is placed into fermentation tanks for 120 hours with the pulp, and then placed onto drying beds with a thick layer for a total time of five weeks. This ASD processed Geisha coffee was used for brewers cup by Wilford Jr. of Lamastus Estates in 2019. The coffee beans were grown in 1850 Masl in the Torre lot, and this lot is a neighbor lot from the Best of Panama Elida Geisha Green-Tip ASD of 2019.

All About Natural Processing

All About Natural Processing

Processing coffee involves converting the raw fruit of the coffee plant into the coffee drink. The coffee cherry has the fruit or pulp removed leaving the seed or bean which is then dried. While all green coffee is processed, the method that is used varies and can have a significant effect on the flavor of roasted and brewed coffee.

Only 250 Cups of This Rare Coffee Will Be Sold in the U.S.—All of Them at One SoCal Cafe

Coffee hunters travel the world seeking out the most perfect beans, often grown in tiny batches in far-flung locales. One such crop, the rare Esmeralda Geisha Cañas Verdes Natural, grown only on a single hacienda in the hills of Panama, hit the market over the summer, and it broke all previous records by selling at an international auction for $601 per pound. (The previous most expensive coffee in the world was a mere $350 per pound.) Of the 100 pounds that were sold to coffee roasters around the world, only one company in the entire United States was able to secure any—SoCal’s own Klatch Coffee, which bought 11 pounds of the precious beans.
