Description
 

Clean, slightly bright red fruit fragrance, with hints of citrus, berry, peach and pineapple. Characteristic brightness in the cup from the distinctive red tint in the soil composition.

Natural Ethiopian Yirgacheffe, believed to be culled from smallerholder farmers in the Gedeo region near Yiracheffe township.

The soil composition is silty loan and clay, giving it a distinctive bright red tint that clearly imparts the characteristic brightness in the cup. The area is planted with Bourbon and Caturra, although there are possibly hundred of unique indigenous cultivators, which make up the majority of the trees.

The post harvest preparation involves careful picking of the only red ripe cherries and the use of raised drying platforms covered with Hessian cloth. Continuous turning of the cherries is required for an even drying.

While most of the greater Yirgacheffe and Sidamo areas utilize a fully washed preparation, mills in the Gedeo region have led the way for the introduction of sundried naturals in Southern Ethiopia as a viable alternative.
