The popular Kochere (washed) is back! It offers a floral and honeysuckle aroma that will surely brighten up your mood. The bright fusion of candied lemon, pomegranate, lime-citrus acidity with juicy nectarine stone fruit body and white tea undertones are highlighted in this very complex and memorable cup.

While traveling to source the best coffees last year, the best coffee I cupped came from Ethiopia. It was here under a tent outside in the rain that I first tasted the best Ethiopian washed I had cupped in years. The washed was a true traditional but ultra clean washed Yirgacheffe with tons of floral notes. Everything you hope for and rarely find.

In asking questions, I found both (the washed and natural) started with only ripe fruit, something we take for granted in some countries but are still educating those in Ethiopia. For this, the farmers (mostly all very small land holders or garden farmers who maybe have one bag of cherry) are paid a premium. Next, the cherry is sorted by hand and processed as either washed or natural. Both receive special preparation of screening, sorting, and even more hand sorting. These are both labor intensive and the proof is in the clean. The growing conditions, elevation, and terrior in Yirgecheffe produce a great flavor, the picking and processing provide only the best of them. Most often coffee from Ethiopia is evaluated with Gr 1 being the best. Typically the best washed coffees are Gr 1 or Gr 2. Natural processed coffee does not look as clean as its washed counterpart and used to begin at Gr 3 to Gr 5. Call it timing, luck or hard work, we were able to find this special prep and even cup the various lots to get only the best of the best for our customers here at Klatch. Blind assessment: Sweet, rich, citrusy. Molasses, complex citrus notes (blood orange, grapefruit, more), roasted cacao nib, cantaloupe, rose-like flowers in aroma and cup. Rich, resonant acidity; full, cushiony mouthfeel. Flavor-saturated, gently drying finish.

Who should drink it: A balanced, complete structure supports a refreshing, sweetly citrusy aromatic.

I've always loved Ethiopian coffee, but I've always purchased from the big corp retailers. This Kochere is one of the most interesting coffees I've ever tried (keep in mind, I'm not a coffee nerd/snob by any means, however, since I've found Klatch, that's changing quickly).

Normally coffee aftertaste is sort of bitter, sometimes acidic, and to me, kind of like drinking diet soda. I'm continually amazed every time I brew this particular coffee by the subtle, berry-ish (but not strong or cloying at all), slightly sweet taste that follows each sip.

Highly recommended, one of my favorites.

Wow! Sweet and bright flavors of lemon, berries and milk chocolate that takes you to an ambrosial oasis that lingers till the last sip. It's not just coffee, it's an experience.
